Note on the Advantages of Using Charentais-Type Stills for Whisky Production.
At our distillery, we proudly use Charentais-type copper stills, traditionally employed in the production of Cognac, for the double distillation of our single malt whiskies. Compared to the classic pot stills used in Scotland, Charentais stills offer several significant advantages:
Charentais stills allow for a slower, gentler distillation, providing better control over temperature and reflux. This results in a spirit that is more refined and complex, with a high concentration of esters — aromatic compounds responsible for fruity, floral, and gourmet notes.
Thanks to the still’s wide, open boiler and its specific design, alcohol vapors enjoy prolonged contact with copper, which improves the purity and elegance of the final distillate. Copper plays a key role in eliminating undesirable sulfur compounds and refining the spirit’s character.
The squat and robust shape of the Charentais still leads to a heavier, oilier spirit with a rounder mouthfeel. This style of distillation is ideal for developing complexity during cask aging and gives our whiskies their signature richness and depth.
Just like in Scotland, we follow a double distillation process. However, the unique characteristics of our stills allow us to produce a spirit with greater finesse and personality. The result is a whisky that combines the strength and structure of a Scotch with a distinctively French aromatic identity.
